Seas’ N’ Lies Lemon, Lavender and Warren Pear Popsicle

What better way to soak up those last few days of summer sun than to make and devour some Frog Hollow Warren Pear popsicles? With some special help from the ladies of Seas'n'Lies Ice Pops based in Berkeley, we made some lovely Lemon, Lavender and Frog Hollow Warren Pear Ice Pops.

This recipe can be easily multiplied to make any number of Ice Pops. If you don’t have popsicle molds, you can use paper cups or any container that can be frozen. So go on and get popping! 
Ingredients:
4 Large Warren Pears peeled
1.5 cup Lavender Simple Syrup*  (1 cup sugar/1 cup water/1.5 tablespoons dried lavender flower) recipe below
1.5 + 1 cups water
1 cup fresh squeezed Lemon juice
 
Preparation:
1) Prepare your Lavender syrup. To prepare the syrup, take 1 cup of water and 1 cup of your preferred sweetener. In this recipe, we use an organic cane sugar. Add lavender flowers and cover, stirring occasionally on medium heat. Be sure not to let the mixture boil longer than a minute or two. You don’t want the mixture to evaporate. Leave the syrup to cool and continue to work on the fruit.
2) Slice your peeled pears and place into a food processor or blender. Pour the pureed pears into a large mixing bowl.
3)Once your syrup has had some time to cool, filter out the lavender flowers with a strainer, pressing on them to extract their oils.
4)Combine all of your ingredients and stir
5) Pour mixture into your molds. If using cups, a clothespin can be used to hold popsicle sticks in place 
6)Then freeze
7) Enjoy! 
*Any left-over syrup is a great addition to sparkling water!
