Stuffed Medjool Date with Mascarpone Cheese, Pistachios and Pomegranates
Makes a 1 dozen

Ingredients:
12 Medjool dates, cut to remove the seed and create a cavity for the mascarpone
12 small spoonfuls of mascarpone
12 pistachios, removed from their shells and shaved using a microplane
Local honey to taste
36 pomegranate arils for garnish

Method:
Stuff each date with a spoonful of mascarpone cheese. Place three arils of pomegranate on each date. Drizzle with honey and use a microplane to shave a pistachio over each date.
Serve at once.
